"Freaky like my lady pyramid!".

Que pasa, Calabaza? Im sorry for neglecting you all weekend. It was kinda weird and hectic and according to Marv Albert, LeBron James has 31 points in his Season Debut with the Miami Heat with less than a minute left in the game. Down by 6 cause Ray Allen just DROPPPED! a sick bucket for 3. So whats this on the right you may be wondering? Well let me drop some Kkkknowledge on you.
We have Olive oil, ground Garlic, crushed Oregano, ground Pepper, Salt and a 7lb bone in Boston Butt Roast. Im not sure why its called Boston Butt Roast because this cut is from the shoulder of the pig. Alright! the Celtics beat the overrated Heat. So this particular recipe is very typical of how pork is cooked back home in Puerto Rico. It calls for 1tbs per lb. of the spices above, but 7tbs of salt is CRAZY! Here's the combination I used.
wet sand is the texture you're looking for.  
4Tbs-ground Garlic
3Tbs-crushed Oregano
3Tbs-ground Pepper
2Tbs-Salt
3Tbs-Olive Oil

Add the olive oil last and you are going to want to mix these by hands, so make sure you have clipped finger nails or gloves. Mix thoroughly until it feels like wet sand in between your fingers. Now you're ready for the meat. Dont get too excited there cowboy, you gotta wash your meat first. Run it under cold water for a few minutes while turning it around. Give it a few good shakes, but remember God is watching you, to get rid of any excess water. Take a nice and sharp paring knife and.......hold on a sec.

The NBA championship ring ceremony for the LA Lakers is going on right now and they are handing out the rings to the coaching staff and other staff....wait OTHER STAFF? The massage therapist got a pHat championship ring, the equipment manager got a ring too??? the Great Kareem Abul-Jabbar is getting a ring too! haha and why are they booing Luke Walton? Oh its so nice to see Ron Artest get his championship ring and he sounds as ghetto as ever too! Thats my DAWG!!!!!

Alright, enough of that. So with your sharp knife, you want to gently poke slits in the meat on all sides. Then take about half of your wet/dry rub and spread it all over the top and sides. Remember the slits from earlier, well make sure massage some of the rub into those spots. Flip it over and do the same on the other side with the rest of the rub. Next up you want to flip that sucka' again and place it on a baking pan, fat side up, and wrap it all up real nice and tight with tin foil. You want to place this back in the fridge and let it sit over night.
The beauty of this particular recipe is that you can either cook it out in a grill or in your oven. You will want to cook this for about 4 and a half hours covered and another 15 to 20 uncovered at 350 degrees.
