
Hello ghouls and goblins! Hope the zombie wars have not shaken your spirits. I come to you with this lovely piece of pork shoulder. On my previous entry, I said that this was going to be cooked out on the grill. Well it didnt happen on the grill. The weather outside was just too windy and cold. But the trick to cooking this little guy out on the grill, is to add half a cup of apple cider vinegar. As the vinegar boils, the steam help accelerate the cooking process on the grill.

So what I ended up doing was cranking the oven to 350 degrees. I placed the covered pan on the top rack of the oven and I let it cook for 4 hrs. At about the 3:45 mark, you will want to remove the cover and place it back in the oven for the last 15 minutes. If you want a crunchier outside, then leave it in for 20 or 25 more minutes uncovered. Feel free to use the drippings for a nice pork gravy. One of my room mates sure did and it taste great. Enjoy this Pernil al Horno with any of your favorite sides and a nice cold glass of water or juice.
